“Last year we attended A Day in Old Mexico & Charreada. We ate elote dressed with lemon, mayonnaise, cheese and chili powder. Also there was a vendor there selling fried beef brain tacos (cessos). We have made these ourselves—basically you take the cow brain and mix it along with ground beef and spices. Roll it in a corn tortilla, slide a toothpick into it and deep fry!”
