Available year-round and exclusively for catering, the Institute of Chili brings bold, slow-simmered Texas red chili to weddings, festivals, and corporate events. Made with smoked BBQ brisket and handcrafted chile paste, our award-winning recipe honors the legacy of San Antonio’s original Chili Queens.

Shaved Ice, Slushies, Frozen Lemonade, and Classic San Antonio snack favorites. If you're looking for lunch options we also serve brisket tacos, Mexican street corn and classic red brisket chili which was named one of the best in the country by Food & Wine Magazine.

We recommend booking at least 2–4 weeks in advance, especially for large or weekend events. But feel free to reach out—we’ll do our best to accommodate you.
